Kitchen on the Edge of the World: the Arctic feast in Lofoten

At 68 degrees north, in the Norwegian village of Sørvågen, a cluster of mustard-colored fishing cabins on stilts juts into the sea. Once a cod factory, Holmen Lofoten has become one of the world’s most quietly extraordinary culinary destinations, and its signature event, Kitchen on the Edge of the World, pulls acclaimed chefs into the kitchen four times a year.

The formula is simple and rare. Visiting chefs arrive, forage outside the property, and cook live-fire dinners with whatever the Arctic landscape offers that week — reindeer ribs from a Sámi-herded farm, Geographic Indication–protected Lofotlam lamb, local cheeses and vegetables. Guests sleep in the converted rorbuer fishing cabins and eat beside picture windows that frame the shoreline.

Reliving the 30th edition

The most recent edition, the 30th since the event launched in 2018, was helmed by Matt Orlando, the California-born, Copenhagen-based chef behind Michelin-starred Esse and the now-closed circular restaurant Amass. Arriving with a case of barley, Danish yellow peas and several misos, Orlando told Condé Nast Traveler he was most excited to work with what he could gather on the spot, heading out to forage chickweed, corn shoots and sheep sorrel for that night’s menu.

“I love cooking in remote places,” he said. “Thinking on the fly and exploring the potential in things you’ve never worked with is where the coolest ideas come from.”

The results read like a zero-waste manifesto made delicious: fishbone noodles pressure-cooked and puréed into slippery strands, fermented potato bread with allium butter, and reindeer served family-style with utensils set aside so guests could eat it with their hands.

Ingunn Rasmussen, the matriarch who has run the property since 2001, is deliberate about who she brings in. Past chefs include Slovenia’s Ana Roš and UK farm-to-table pioneer Simon Rogan. “We take time picking them,” she said, “because we want chefs who will be considerate about the people and wildlife that make this our home.”

The event runs four times a year, and the regulars return time after time — resident mixologist Mia Hjorth Hansen, co-owner of the Aarhus bar Gedulgt, was on her twelfth Kitchen on the Edge, pouring Negronis reworked with foraged blackcurrant leaves and yarrow-steeped Campari. With close to a million visitors drawn to Lofoten’s peaks each summer, the autumn event trades the crowds for something quieter: a table set between the mountains and the sea, and a tracking app notifying the room that the Northern Lights might appear after dessert.
