Marry Me Chicken Gnocchi Soup Is a One-Pot Dinner Ready in 35 Minutes
Delish has done the obvious, delicious thing: it folded its viral Marry Me Chicken into a creamy chicken and gnocchi soup. The result is a one-pot dinner that serves 10, gets a head start from rotisserie chicken, and lands on the table in about 35 minutes.
The recipe, from test kitchen-approved developer Taylor Ann Spencer, mashes up two Delish fan favorites — the original Marry Me Chicken (which Delish says it created back in 2015) and its creamy chicken and gnocchi soup. "Cozy night-in calling your name? This Marry Me chicken gnocchi soup is here to answer," the intro promises.
The Marry Me formula stays intact: garlic, sun-dried tomatoes, thyme, Parmesan, and a finishing splash of heavy cream — "but not too much!" — build a lightly creamy, slightly sweet-tangy broth. A Parmesan rind simmers in the pot, too, then gets fished out before serving.
The shortcut that makes it weeknight-friendly
The clever part is how little real cooking there is. Jarred sun-dried tomatoes and their oil double as the flavor base, cooked rotisserie chicken skips the poaching step, and a 16-ounce package of gnocchi goes straight in from the shelf. Spencer calls it a favorite trick for fast dinners: take advantage of ingredients "already seasoned and prepped."
The steps are short. Soften shallot and garlic in tomato oil, cook out a spoonful of tomato paste with thyme and sun-dried tomatoes, then simmer everything with eight cups of chicken broth. Gnocchi and shredded chicken join for the last few minutes, followed by cream and grated Parmesan. A quarter teaspoon of crushed red pepper flakes adds gentle warmth, and torn basil lands on top of each bowl.
Because it's soup, it also gets better overnight — Delish says to cool it completely and stash it in an airtight container in the fridge for up to three days. Prep runs 15 minutes, the full cook is 35, and at 395 calories for one of ten servings it's designed to be a full dinner rather than a starter.
